Even better - leave them disabled by default and install/update specific 
packages with --enablerepo= to control which you get and avoid, to the 
extent possible, random conflicts.   I'm not sure if this is still true 
but I thought it was fairly safe to leave epel enabled since they 
rarely/never overwrite base packages.  But sometimes you want something 
newer from rpmforge.
