I've used IET (iSCSI Enterprise Target) before in just a quick test.
Compilation was quick and easy, configuration was a breeze.  I had no
working knowledge of iSCSI before I had attempted this.

If you don't need to use it as a server for anything else (like applications, webserver, etc.), you may want to look at OpenFiler <www.openfiler.com> instead of Centos. I've had very good success with running it on dedicated iSCSI target.
