Thank you Feizhou.  I'm hoping it's exactly that easy.

The installer will not let you remove packages that are in the 'Base' group. If you remove any package that bind, vsftpd or openssh-server needs, it will tell you later and ask you whether you want to ignore or install all dependencies and so you should safely get a working system.
