I've built several CentOS5 VM directly from the DVD .iso on
VMware ESX Server.

Download the DVD, since there's no value in swapping disks with a VM.
You can ask VMware to treat the raw ISO image as a real DVD-ROM drive,
so you don't have to have any kind of optical drive in the VM host
server machine.
