 I have installed centos using automatic partition.  I would like to
partition
 my hard disk to /, /var/, /usr, /home separately.  Is it possible now to
 partition post installation.  I also need to have FAT32 partition to share
 files from between ntfs and linux.

It is possible yes, however the simplest and best approach would be to
back up your data and reinstall.
