If you installed XFCE from the CentOS extras repository it should already show up in the switchdesk interface as well as the gdm 
session selection list.  Installing XVCE using yum is easy if you're on CentOS 4.x, just enable the "extras" repository and use the 
command "yum groupinstall XFCE-4.2".  I don't know about CentOS 3, I never bothered with XFCE on them.
