Well the answer you do not want to hear is that https://github.com/jitsi/jitsi-meet/blob/master/doc/manual-install.md is as close as you are likely to get.

But here is the good news - I am interested in helping. 

Each time you run into a blocker - ask and I or someone else will earnestly investigate and hopefully mitigate it.

I will update docs, take merges from you, and try to get the upstream to accept a centos-install.md
