I'm not aware of a way to group windows when running GNOME in classic
mode, which is the default in CentOS 7. However, if you use GNOME in
standard mode with the 'Window list' extension enabled, you can
configure that extension to group windows.

You could also enable the 'Application list' and 'Places status
indicator' extensions in standard mode to make the environment more
familiar.
