The GNOME help system is a little light on details for WPA2 Enterprise, but the UI seems clear and straightforward.  Is your client struggling with the UI, or do they need help getting the certificates?  The latter process tends to be site-specific, so they probably won't find public documentation for it.  Once they have the certificate and key files, it's simply a matter of filling in the appropriate fields in the "Security" tab of the Wi-Fi connection properties.
