Keeping in mind that the minimal install is exactly the same as what upstream builds as a minimal install, I'll suggest this:

A mail daemon is part of the minimal install for any *nix server. While you may not use the system as an actual mail server, there are likely services and processes (cron jobs, etc) that will generate mail as part of their normal processing.
