Currently Gnome 3 is OK with multiple monitors, especially when run in the "classic mode".
Elrepo continues to be the recommended way to install nvidia drivers, nvidia-detect will suggest the correct kmod you need e.g.:

yum install nvidia-detect && yum install `nvidia-detect`
