I always thought that the CentOS project did itself a disservice by not encouraging and staying associated with the more usable respins. Another good one that worked up through CentOS5 was K12LTSP which was a fairly stock CentOS install that would come up PXE-booting thin clients - and it added a working java (back when that wasn't easy), flash, and a set of education-related programs.
