What virt-manager version are you running? Mine is
virt-manager-0.9.0-19.el6.x86_64 and it shows the bridge devices like
Host device vnet0 (Bridge "br0")
Host device vnet1 (Bridge "br1")
and they are selectable. Maybe it is something different in your
configuration.
