When you get to the package selection stage of the install scroll down 
to the bottom and select 'Minimal Install'. Yum will only ever install 
the dependencies that are needed. So if you want to keep the server 
minimalist don't install KDE or GNOME packages as they'll drag in X 
windows and the KDE or GNOME libraries with them.
