I think there are not enough write permissions.

I have build a directory:
/var/log/dovecot
with user and group permissions for the dovecot user: drwxr-xr-x

and the log file:
/var/log/dovecot/dovecot.log
with user and group permissions for the dovecot user: -rw-r--r--
