Surely it is a single command? Two if you have to generate the UUID.
On my home machine I cloned my boot drive, then set the UUID of the
second drive with:

prompt> uuidgen
then cut and paste into
prompt> tune2fs /dev/sdb1 -U c491d94e-7004-4b08-9993-4c9a7a25b6b1
and check it with
prompt> blkid
