Try Thunar. It has a bulk renamer tool that can do just that. You
simply
choose its Search and Replace option and tick on REGEX to
accomplish
what you are looking for.

Is it possible to craft a regex to just find all single letters,
followed by a dot? What file renamer is the best one to use for
this?
The one I currently use is brename
