ps2txt is actually a symlink to ps2ascii. I say this because there is also pstotext which is in its own package, and which may give different results again.

I generally use pdftotext but I have been known to try them all if I get marginal results in converting a document. pdftotext also has some nice features like -raw and -layout which can change the formatting of the output, useful if there's tables that you need to read across rather than by column.
