while I don't know about converting to m4b, you can use mp3wrap 
to losslessly join MP3 files together.  It (and its counterpart 
mp3splt for losslessly splitting MP3s) should be available in the 
repositories of most distros.  A quick google suggests a tool 
called "faac" for converting from mp3 to m4b format.
