I suspect cups is taking this text/plain file and converting it into postscript and from there, who knows. What do you see in your /var/log/cups/error_log file? Are you using the proper ppd file? what do you see when you do a "lpoptions -p {PRINTERNAME} -l"? You can edit your /etc/cups/mime.convs to tell cups what to do with your file.
