For mutt, there's a configuration file called .muttrc and mutt does not roll you a default .muttrc file when you first start it up either. There is an examples directory /usr/share/mutt/examples/ I think with some pre-packaged configuration files in it you can copy into your home directory then edit to your heart's content. Only thing is, you need to edit that new .muttrc file correctly. You can read comments in the file those lines that start with # and in /usr/share/mutt/ there should even be a manual. It's possible to get mutt set up but takes a bit more work than pine or alpine.
