Should you decide you want to try the speakup reflector sometime, opening up the appropriate ports to your linux box isn't really that difficult. You forward ports 2074-2076 and 4074-4076 for both udp and tcp to the linux machine. I don't know of any other voice chat systems myself so I can't help there.
