Regarding secure boot thing - Initially I had it disabled all the time,
but now I feel that it's just the right thing to do. Secure Boot is one
of a security measures that thankfully I have control of. I sign GRUB,
it's modules and a kernel with my own generated Machine Owner Key
enrolled to shim. If you just want to try Arch Linux - you can skip it
(leave secure boot disabled) and return to it any time.
With other decisions - I just have a 14+ years of experience with Linux
in general and I know what I want. I've stopped at the DE that I prefer
(Plasma 5 in my case) and a set of applications that I use. So when I
switched to arch - decisions weren't a big deal for me.
