Hi, at least the serious issues of Evolution are solved. I tried to troubleshoot (not to workaround) the issue again, but there was no need to troubleshoot anymore. I can access the contacts again and umlauts are send again, just a box to select spamassasin or bogofilter, if both evolution packages are installed is missing, but that isn't an issue at all.
