log files missing "randomly" from access_log

I have a number of virtualhosts configured with a different access_log
for each one. I also have a "monitoring" server which sends a request to
each of the virtualhosts every 5 minutes.

Sometimes, these regular requests don't get logged in some of the
virtualhost access_log files. ie, each virtualhost has a different
number of lines from the monitoring host. In some hours, there are 0
logged requests, while in other hours there are exactly 12 as expected.

There are no error messages in the error_log apart from the usual
miscellaneous 404/etc errors for bad links/etc....

The server is running Debian Etch stable with all patches/updates
applied. Linux 2.6.18, Apache 2.2.3-4+etch4

The system is in fact a virtualhost under XEN, and is using a NFS root
mounted from another machine running Debian Etch Stable with all
updates/etc.

I'm at quite a loss as to where to look for problems, since the only
evidence of a problem is the lack of entries in the log file....

Any advice on things to try/places to look/etc, more than welcome.
