Apache2.2.4 builds without a problem on OS-X. To use the control panel we use the following:

Edit /usr/local/apache2/httpd.conf to change default location of the PID file from:

PidFile /usr/local/apache2/logs/httpd.pid
to:
PidFile /private/var/run/httpd.pid

Link /usr/sbin/apachectl to /usr/local/apache2/bin/apachectl:

cd /usr/sbin
sudo mv apachectl apachectl.orig
sudo ln -s /usr/local/apache2/bin/apachectl apachectl

Yes, I am sure I can build and install it from source without any
trouble.

What I am uncertain of however is how to get the machine to launch
the Apache2 webserver as opposed to the the default one installed on
the system.

I am also assuming that if I install Apache2, I would no longer be
able to use the Sharing panel to turn the server on/off and would
need to do so from the command line.

I can't imagine this is terribly difficult...I just don't know the
answer.

If you were running a flavor of Redhat or a similar Linux distribution, I'd be able to help you.

Unfortunately, how Apple has chosen to do things is out of my area of expertise.

I do know that the current Mac OS is based on a flavor of BSD, I am wondering if they might use a similar start-up scripting method as the BSD distributions. At any rate, it would be something to ping the Mac support lists about to see what they can do to help you.
