I tend to follow the same policy, however I've noticed that when I don't set a global ServerName I get startup errors like "httpd: Could not reliably determine the server's fully qualified domain name, using example.com for ServerName". Although it never says "example.com", it shows whatever hostname returns. The error doesn't appear to cause any problems, it's just mildly annoying.
