You can use rotatelogs
http://httpd.apache.org/docs/2.2/programs/rotatelogs.html
This works for JkLogFile too

Example:
JkLogFile     "|/path/to/apache/bin/rotatelogs /path/to/apache/logs/mod_jk.log.%Y-%m-%d-%H_%M_%S 5M"
The rotation is here  after 10 MB with a timestamp of mod_jk.log.2006-02-23-12_00_00. 

If you are using 2.2 you can use mod_proxy_ajp
