Somebody else has posted mod_tee if you really mean literally to log all responses. Gosh! that would be a lot of traffic for our system.

But if you want to log Response TIMES, I would direct you to the access log configuration. I have used this very successfully to get real data on what users do, and how long we take to serve them.

I have a requirement to Log the Responses. I could not find any module that could do that
Does any body know of a module that logs Responses
