A couple of notes about that.

1) While the coraid.com-distributed driver has that in sysfs, the kernel.org-distributed aoe driver never had a sysfs-based debug export, because it's not something the LKML reviewers would pass, but
2) There is a new debugfs-based export of the same information that will be in v85 of the aoe driver, both from kernel.org and coraid.com.

As you say, you need to look at the information in conjunction with the source, so this is not really a documented feature but a mechanic's view of what's under the hood.
