Volume changes on the Xonar D1/DX need several milliseconds and thus are relatively slow, compared to most on-board sound cards. However, there are other sound cards that behave the same. It looks as if the gnome-applet saves all mouse moves and tries to execute the volume changes for all intermediate positions even if the mouse has already moved to the final position. Please file a bug with that mixer.
