But I dont see a link to any set of server/mirrors.
  What part of what man pages talks about repomd.xml? The only bit I
can see is the text for the metalink option, which is a list of
mirrors and the checksum of the repomd.xml

Sorry for the super-late response. This string can be search for in yum.conf man page.
