Long answer, --installroot is particularly useful if you want to create/work on an alternate root installation, e.g. when rescuing a broken system, or installing an OS template for a VPS. If you want to move the binary location of some (not all) packages (e.g. move bash from /bin/bash to /opt/bash/bin/bash), then you can't do that with yum and normal distro-provided rpm. You need to create a special rpm for that.
