man yum.conf look for group_package_types:
       group_package_types
       List  of  the following: optional, default, mandatory. Tells yum
       which  type  of  packages  in  groups  will  be  installed  when
      ʼgroupinstallʼ is called.  Default is: default, mandatory

 2) for a given group, is there a way to show the *total* set of
    packages that would be installed after all the dependencies were
    included as well?

Run echo 'n' | yum groupinstall groupname
that'll show you. However, which pkgs will be installed will be dependent on which pkgs are already installed.
