You are correct sir, I completely missed the "=". However it would really be nice to know what = should be. In the documentation it says "--grow= Tells the logical volume to grow to fill available space (if any), or up to the maximum size setting. My sda3 partition is 250GB The volume group is the entire size, I am using 13GB or so prior to the call for "virtual machines", therefore the "virtual_machines" partition should be 230GB or so.
