This is reasonable enough for my needs. "runlevel" is the operative word here. As you've found, skipx will choose between 3/5, but for more fine-grained control (perhaps you want X to be configured but not start by default) this will work: %post perl -i -p -e 's/^id:.:initdefault:$/id:2:initdefault:/' /etc/inittab to set runlevel 2, for example.
