Jeremy,

The common response to this theme is that Red Hat removed all kinds of
stuff from the kernel that they didn't want to support for 5 years. 
They did put a lot of things in a separate RPM called
kernel-unsupported.  I don't know if iSCSI is included there, but I know
firewire is.
