When I've tried mounting nfs partitions in %post using names rather than ip addresses it didn't work. I've been using numeric addresses since 7.0, I think, and haven't been serious about named addresses since. Maybe thing have changed. I use DHCP too but I have no control over it's configuration. Maybe your's is set up better.
