No you can't. The xconfig line as generated by mkkickstart is bogus. You
need a line like

xconfig --server "SVGA" --monitor "Generic VGA"

or something.

What I have found is that it is horrible to let kickstart set up your X
configuration. I always include a line like above, and in the %post section
I set the symbolic link /etc/X11/X correct manually (installing additional
XFree86 RPMs if needed) and copy the XF86Config file off a networked server
(NFS, FTP).

When I kickstart my computers, I have to chose what graphic card I use,
manually. How can I set this to only set it up with a standard vga card?

if I use

-- xconfig --server "/etc/X11/X: symbolic link to
../../usr/X11R6/bin/XFree86" --monitor "generic monitor"

I get an error, so I've just commentet out that line. can I do that?
