I have both MATE and Xfce installed.
Whilst I work on my xinit/lightdm problems,
I am firing up my GUI with startx.

startx fires up xfce by default.

How to I tell startx I want to fire up MATE?

Let me Google that for you:

Has switch desk start to actually work?

I was looking for a command line to use
with startx to fire up MATE.

the section on the google'ed link:

Manually editing the system configuration
was no help either:

Manually editing the system configuration.
$ cat /etc/sysconfig/desktop
PREFERRED=/usr/bin/startxfce4
DISPLAYMANAGER=/usr/sbin/lightdm
