Lo usual es tener una sola partición EFI (la cual no está dentro de
Fedora sino es accesible desde el BIOS. El comando efibootmanager te
permite configurar las opciones. No hace falta montarla en Fedora
porque dicho comando lo manipula directamente. Puedes especificar el
disco duro a usar.

    The usual setup is to have one EFI partition (not a Fedora
    directory). You can use the efibootmanager command to change
    options. You don't need to mount the EFI in Fedora as the command
    accesses it directly. You can specify which hard drive it should
    use.

So when the machine starts up it tells me something about two
'journal'... I don't know what...

No está claro si puedes usar el sistema o no, pero en caso que sí
sugeriría deshabilitar el boot de una de las particiones usando el
efibootmanager.

Two installations of Fedora can be run on the same system With each installation on a separate drive. The installation to be executed can then be started from the bios. The partitions /boot/efi, /boot and /root are all unique to the installation. Can even include Windows.
