I think you're running Gnome Wayland. Does the same issue exist if
you run Gnome Xorg?
FWIW, I don't see any error in your journal.
If you can downgrade the bluez packages and the issue goes away, then
yes, that would confirm a problem
with one of them.
If not, also try booting the previous kernel and wait for the next
kernel upgrade to see if that changes anything.

I lost my dog yesterday so.. not going to venture into anything in the
upcoming few days. I am actually using F34 and not 35 as stated
previously. I'll probably do a fresh install of F35 and see how it goes.
