"rpm -qa | grep eclipse" should show you most of them.
Run "dnf group remove eclipse" first to remove the group and most of
the packages.
You might need to run "dnf remove '*eclipse*' " after to remove some
more. I seem to have a bunch of eclipse packages that aren't part of
the group.
Since Jonathan's solution worked, I did not get to try your
suggestions. But they look like good things to keep in mind in the
future.
You might still want to try removing the group to avoid any surprises in
the future.
