I'm on Fedora 32 and updated Nextcloud to 18.0.4 this afternoon. I
don't see any warnings about PHP 7.4 and it's working great.
Do you have something specific in web server error log?

Other folks have reported getting away with it too.
And Nextcloud 19 beta 4 is out that does support PHP > 7.3
