Depends what you want from it. If the partitions have real filesystems
in them then mount them and tar the mounted trees.
Otherwise there's no benefit to using tar, which stores named files and
their data. Just cat the flash drive to flash_drive.img and there you
are: a usable drive image file - plain data.
