(logwatch, mdadm, rkhunter...) send a mail, the FROM field is rewrited
with my name ans email address, but the TO field is
root@my-internet-provider.

How can I get the same as in the FROM field? ie.
root=me@my-internet-provider

The recipient is not defined within the ssmtp configuration. The recipient address gets specified by the programm that calls the sendmail binary. So for instance configure MAILTO for cronjobs. logwatch has a MailTo parameter.
