I installed from scratch, and I did have video troubles with 2 monitors. I unplugged one monitor and I was able to install without any issues. After install, I plugged the 2nd monitor back in and I have the same video troubles with Gnome and either Wayland or Xorg, whether in graphical mode (gdm) or not (startx). That's why I was looking for the X logs. Luckily, Mate works flawlessly, as always.
