Could you please describe the process for doing this?

Depending on how you have LO opened you'll see one of 2 things.

If you just started the "main" LO you go to "File" in the menu and you'll see a entry
for "Sign Existing PDF".

If you have an open document, worksheet, etc you go to "File" and in the menu you'll
see an entry "Digital Signatures" and under that is "Sign Existing PDF".
