I'm having the same problem at work on an Ubuntu workstation (16.04 I think?) but only when using gnome (or mate). No problems yet under Unity. So perhaps something in gnome triggers the crash in nouveau. The whole system doesn't crash, only the X-server (or wayland) and you can ssh into the system from another machine and run dmesg.
