Well I think that the beauty of GPT is simply profoundly large disks are now possible to effectively use.
I think that the beauty of EFI is in its ability to use a much broader base of hardware and software possibilities.
Grub2 is one way to manage multibooting on a single disk.
Basically it is simply the next generation firmware interface. Last I looked (about a year ago) it was a bit fraught with industry monopoly stuff. I hope we worked that out.
